- ¼ medium watermelon
- ¼ red onion, thinly sliced – optional
- ½ c fresh mint leaves, torn
- ¼ tsp salt
- ¼ tsp pepper
Cut up the watermelon and arrange on a plate. Sprinkle with the red onion, mint leaves, and salt and pepper.
Minted Watermelon Salad is a refreshing summertime side dish. It goes especially well with spicier main dishes like Spicy Beef Kebabs with Lime. You can quickly whip it up while the kebabs are cooking. And, big surprise – I opted to leave the onions out!
