I have longed to try my hand at paninis. The hold-up being I don’t have a panini maker. But Ashley over at Hem and Her helped me to realize I in fact do when she shared this recipe. A George Foreman grill!
I tried my hand at Ashley’s Grilled Pesto Chicken Panini as my very first homemade panini experience. And boy did I luck out. I couldn’t be more pleased with this first experience. So quick, easy and flavorful! It does not disappoint!
My husband especially fell in love with it immediately. We’ve made them on a couple different ocassions now. There is so much goodness in this sandwich. The juicy chicken (I use cutlets), the crusty outside, fluffly inside of the ciabatta bread, melty cheese and pesto to boot.
This was also our first taste of pesto. How have we not experienced this amazing, flavorful condiment before!?! I cannot wait to find more uses for it pronto.
