Another great Hem & Her find! I can definitely tell how much some of my tastes are changing (while others are not). I would never have sought out a stuffed peppers recipe. But as soon as I saw Ashley’s post, I had to bookmark it!
My husband and I have been trying to eat healthier and this looked like just the ticket! Turkey meat instead of beef. Fresh, flavorful peppers. Yum! And I didn’t even realize until I was in the middle of prep that it was a Weight Watchers recipe! Which if I’d have known I may have also steered away from. But coming from Ashley at Hem & Her, I threw all my caution (old dislike of stuffed peppers in general and my tend to stray away from Weight Watcher type recipes) to the wind! I knew Ashley wouldn’t steer me wrong.
Speaking of prep, this recipe does have more necessary prep work than I like. But it’s worth it! I’ll also note that I did use just reduced sodium broth and regular cheese. So not quite Weight Watchers approved. Oh and to top it off, my husband suggested adding sour cream. Mmmm, so bad, but so so good!
