Makes 4 servings
- 8 frozen plain or whole-grain toaster waffles, unthawed
- 4 eggs
- 8 slices of bacon
- 4 slices cheese
- 4 Tbsp unsalted butter
Cook the eggs to your preference (scrambled, fried or over easy). Cook the bacon according to package directions. Place 4 of the waffles on a work surface. Top with the egg, bacon, cheese of your choice, and the remaining waffles. Spread the top of each sandwich with ½ Tbsp of the butter. Melt the remaining butter in a large non-stick skillet over medium heat. Place the sandwiches in the skillet, buttered side up. Cook, pressing with the back of the spatula and turning occasionally, until the Cheddar melts and the waffles are golden, 3-4 minutes per side.
This is the latest variation we’ve tried of the waffle sandwich (see also here and here) from Real Simple’s special edition, Meals Made Easy. We went with fried eggs and omitted the cheese this time. Which is what’s great about this sandwich. There are so many ways to make it and every way is the right way! You can make the eggs any way you’d like. Add any breakfast meat you’d like. And use any cheese you’d like. And add or omit any of those ingredients you wish or even come up with your own ingredients to add!
Now I seem to have an issue with cooking pork related items. If you remember, I have trouble with sausage links. And I have yet to make good bacon. So, as seen here, I always just use microwave bacon. It is nice because it’s one less thing to fuss with and cooks up quick. But I would love, one day, to make a perfect batch of home cooked bacon.
